Pie City Greens - Microgreens grown local to Kyle, TX. We decided to partner with PCG because here in Kyle, there aren't any options on sprouts. And they are an easy way to add to your food providing a ton of nutritional benefits. Here at Halftime we wanted to utilize our space to provide residents of Kyle/Buda an opportunity to place an order for microgreens and proud to partner with PCG.

Microgreens are young vegetable greens that are planted densely and harvested after a short grow cycle. Falling somewhere between sprouts and baby greens, most microgreens are ready for harvest after about 8-14 days just after the first true leaves have grown. Microgreens are added to plates for texture and flavor. Let’s be real, they’re also just pretty! BUT best of all, microgreens are packed with vitamins and antioxidants, are a great source of fiber and can actually contain higher levels of nutrients than their fully grown counterparts.

I realize that sounds strange but it all started when I (your microgreens farmer- Sara👋🏼) had to remove certain foods out of my diet due to gut and digestion issues including garlic and onion. I started making nearly everything from scratch in order to avoid garlic and onion which led me down a healthier path of understanding what it means to eat whole foods but still left me needing alternative ways to flavor food (the cravings for onion and garlic were real).

After trying microgreens at a farmers market, I started researching what you can grow as microgreens and learned about leeks giving a gut-friendly onion flavor. I started adding them to everything. And when I say everything, I mean EVERYTHING 🙌 Leeks were my gateway microgreen!

Fastforward to now- I’m a microgreens farmer growing out of Kyle, TX (the Pie Capital of Texas, hence the name).
